Day 149 - Memorial Day

I took my kids to the cemetery today in honor of Memorial Day. Not sure much sunk in for a three and a one year old, but I'm glad we went. Thank you to all our service men and women and for those who have given their lives for mine.

Day 147 - Flower Pot Desserts

Minus the flower pots. I just couldn't bring myself to buy six clean flower pots and eat out of them.
Oh...I don't know if it was this or the two egg rolls I ate, but I was a sick puppy the next day. So sick, I couldn't even take a picture! These are really rich. Recipe from Pioneer Woman.

Day 139 - Peanut Butter Cookies

I HAD to have these today. Actually any cookie would have done, and these are the easiest. It's just one egg, one cup of peanut butter, and one cup of sugar. BUT, I didn't have a full cup of peanut butter left, just 3/4, so I only used 3/4 sugar and the one egg, and they turned out better than they ever have before. You just mix those ingredients, roll individual balls in sugar and then press flat with a fork. Bake at 350 for 9-11 minutes and enjoy!

Day 136 - Soy Citrus Sea Scallops

This is Cooking Light's Soy Citrus Sea Scallops with Soba Noodles and Sugar Snap Peas with Vinaigrette. I have made this dish before, but this time I did it with the variation suggested in the recipe review comments. This time I skipped marinating the scallops and I dredged them lightly in flour. The whole meal is delicious. I have never made Soba noodles before and now I can't wait until I can go to the store to get more. Also, the simple vinaigrette recipe for the peas is amazing. The recipe is in the text of the scallops recipe. Go out and make this! Oh, and this is really two servings. I always forget that Cooking Light recipes are for four people, and there are just two of us adults at home. But don't worry, nothing went to waste!

An ode to my favorite diet treat. Yes, I did have to sacrifice myself and eat part of that one ice cream sandwich for the sake of the photo. (Okay, I ate all of it). And another one later on. Just being honest.
