Coconut Curry Chicken Soup - Project 52 Week 8

My lovely mother made this soup and I made her share it with me.

Chicken Curry Coconut Soup adapted from Super Soups with Isabel

1½  cups white rice
3 cups chicken or vegetable broth
1 can (14 oz.) coconut milk
2 tablespoon curry powder
½ tsp red pepper flakes
1 medium sweet potato, diced
3 small chicken breasts, cut in 1/2-inch strips
4 tablespoons lime juice
1 spring onion
Chopped cilantro
1 lime
Unrefined sea salt & black pepper

1. Cook the rice.
2. Bring the chicken broth, coconut milk, curry, and pepper flakes to a boil.
3. Add the sweet potato and simmer for 5 minutes.
4. Add the chicken and cook until done, about 6-8 minutes.
5. Add the rice and simmer for 30 seconds.
6. Remove from heat.
7. Add the lime juice, salt, and pepper to taste.
8. Garnish with chopped spring onion, cilantro, and lime slices.

HI Kelly, your page is looking really professional with the extra pics. Excellent work! And thanks for the recipe - I will have to definitely try it when winter comes - we have had over 30C degrees for over a week and I am over it!
