Double Dark Chocolate Cookies - Project 52: Week 21


Double Dark Chocolate Cookies

2 cups (11.5 ounces) Guittard 63% Extra Dark Chocolate Chips, divided
½ cup unsalted butter, softened (1 stick), divided
¾ cup sugar
½ teaspoon salt
1 large egg
1 teaspoon vanilla extract
1 cup unsifted all-purpose flour
½ teaspoon baking soda

(To make the cookies gluten-free, use your favorite gluten-free flour and add ½ teaspoon Xanthum Gum.)

Preheat oven to 350. Line baking sheets with parchment.

Heat 1 ½ cups of chips and 2 tablespoons butter in small microwave safe bowl at medium power (50% or level 5) for 1-2 minutes, stirring well after 1 minute initially, then at 30 second intervals until smooth. Set aside.

Cream remaining 6 tablespoons butter, sugar and salt in large mixer bowl until light. Beat in egg and vanilla until smooth. Add melted chocolate, stopping to scrape bowl as needed. Mix in flour and baking soda just until incorporated. Stir in the remaining ½ cup of chips.

Drop rounded teaspoonfuls onto prepared baking sheets. Bake 11-12 minutes or until tops are cracked and crusty. Centers should still be soft and appear slightly underdone. Let stand 5 minutes before removing to cooling racks to cool completely. Store in airtight container.

Flowers

I completely dug up my front flower bed and planted all new stuff. I forgot to take a "before" picture, but I can tell you it was bad. Weeds, sluggish hostas and more weeds. I'm pretty proud of myself because I actually do not like to garden, but I found this project to be pretty enjoyable. I think it helps now that the kids are older and can play without running into the street.

Gluten Free Brownies with Chocolate Ganache - Project 52: Week 17

I'm too lazy to get the brownie recipe typed up, but here is the most wonderful Ganache recipe. I don't think I'll ever use frosting again; I'd rather use Ganache.
Ingredients:
¾ cup chocolate
2 Tbsp butter
3 Tbsp whipping cream
2 Tbsp corn syrup

Directions:
Melt chocolate and butter together over low heat. Remove pan from heat and add cream and corn syrup. Mix till smooth. Pour over brownies or cake, etc...

Broccoli Beef - Project 52: Week 18

This is based off the beef stir fry recipe with the only vegetable being broccoli. I love it!

Citrus Water - Project 52: Week 20

Duh...I've kind of not done my food photography for almost 2 months! I have no excuses. So here's to getting back at it. (I've taken a couple of pictures here and there, so I'll try to catch up a little).
I first had this at a potluck. It's just orange, lemon, and lime slices in water. I was really hesitant to try it since I don't even like lemon in my water, but the ladies insisted I try it, so I did and I enjoyed it.
