BBQ Chicken

I did better on my BBQ technique this time. The BBQ was half as hot and I took care to cut off as much fat as I could. Just thought I'd show you!

Smashed Potatoes - Project 52: Week 24

These delicious Smashes Potatoes are adapted from Pioneer Woman's recipe. Enjoy!


5 whole Large Yukon Potatoes
1 stick Butter, Softened And Cut Into Pieces
5 slices Bacon, cooked and crumbled
2 whole Green Onions, Sliced
¾ cups Sour Cream
Salt to Taste (add Plenty!)
Freshly Ground Black Pepper to Taste

Preparation Instructions
Microwave potatoes or bake in the oven until fork-tender. Add to a large bowl and smash with a potato masher. Immediately add softened butter, green onions, bacon, and sour cream and stir with a rubber spatula. Add salt and pepper to taste.

Serve hot, sprinkling on extra bacon and green onions. Yummy with grilled steak or chicken!

Gyros (Gluten Free) - Project 52: Week 23

This is my version of a gluten-free gyro. With the delicious ingredients like lamb, feta, tzatziki sauce and olives, I really didn't miss the pita bread. I just rolled up the big lettuce leaf and enjoyed.

BBQ Chicken - Project 52: Week 22

This was my first barbecue of the season, and it didn't go that well. I had a McCormick's Bourbon and Whiskey season packet that I marinated the chicken in, and when I set the chicken on the grill, it went up in flames! I guess next time, I'll put the chicken on the little rack above the rack by the fire. I peeled the black skin off the chicken for this picture. Under the blackened skin was some delicious chicken. A good learning lesson! 

I also did the potatoes on the grill as well.
